This is a very moist bread with a good flavor. Grain-free, gluten-free, and guilt-free, this bread is recommended to those on Keto and low-carb diets by YouTube’s Dr. Eric Berg DC.
SMOKY PARMESAN: For a delicious variation, add 1-2 Tablespoons of Smoked Paprika and 1 cup shredded fresh Parmesan cheese with the dry ingredients.
In small bowl, mix the following and let rest 10 minutes until foamy:
1 1/4 cup filtered water 105-110F
1 Tablespoon active dry yeast
2 teaspoons maple syrup
While yeast grows, stir together the following in a large bowl:
1 cup almond flour
1 cup arrowroot flour
1/3 cup coconut flour
1 tsp. sea salt
Once yeast mixture is foamy, add the following to yeast and let sit a few moments until it gets gelatinous and thick, then whisk together:
1 ½ tbsp. very finely ground chia seed
2 tbsp. organic psyllium husk powder
Mix yeast mixture with dry ingredients. Stir to form ball and knead about one minute in the bowl. Cover with damp towel, and allow to rise in warm place for about an hour. Dough should double.
Turn risen dough onto work surface and form two small boules. Brush with egg yolk mixed with a teaspoon of water for a golden crispy crust. Score pattern on top with lame or sharp knife. Place on preheated baking stone or parchment covered pan. Bake 425F 35-40 minutes or until internal temperature is 205-210F. Brush top with butter for a softer crust. Transfer to cooling rack and cool completely before slicing.
